    recipe

    Method

    1. Line eight muffin wells with paper liners. Melt chocolate in a dry microwave-safe bowl in 20-second bursts, stirring until smooth. 2. Spoon about half the chocolate into the liners and spread over bases and partway up the sides. Refrigerate for 15 minutes. 3. Meanwhile melt butter in a skillet over medium heat. Toast kataifi for 6–9 minutes, stirring constantly, until evenly golden; cool for 10 minutes. 4. Mix toasted pastry with pistachio cream and tahini. Divide among the chilled shells, leaving a little room on top. 5. Cover filling with remaining melted chocolate, gently reheating it if needed. Scatter with pistachios. 6. Chill for at least 20 minutes until firm, then peel away the liners.
