    Recipe

    Ingredients

    • medium sweet onions
    • unsalted butter, softened
    • smoked paprika

    • kosher salt
    • cayenne pepper
    • lemon juice

    recipe

    Method

    1. Heat oven to 400°F. Peel onions, trim the tops and shave roots flat without removing the root base. 2. Scoop a small hollow into each top. Mix butter with paprika, garlic powder, salt and cayenne, then divide among the hollows. 3. Place each onion on a double layer of foil, add 1 tablespoon water and seal loosely but securely. Set packets on a rimmed tray. 4. Bake for 60–75 minutes, until a knife slides easily through the center; large onions may need longer. 5. Open carefully to release steam, drizzle with lemon and spoon the buttery packet juices over the onions.
